Cinnamon Toast Crunch Cupcakes!

My husband loves cereal. Literally has a bowl a night. So I found a recipe over at Your Cup of Cake for Cinnamon Toast Cupcakes and decided to try it out. If you don't like cream cheese frosting though I would try to go for a Vanilla or butter cream instead.

Ingredients for Cupcakes:

3 eggs
1/3 cup oil
¾ cup buttermilk
1 teaspoon vanilla extract
¾ cup sour cream
Vanilla Cake Mix (I just used Yellow Cake Mix)
1 ½ teaspoon cinnamon

Ingredients for Icing:

8 oz cream cheese, softened
½ cup butter, softened
1 teaspoon vanilla
3 cups powdered sugar
Cinnamon Sugar
* Cinnamon Toast Crunch to top with

Step 1) Preheat oven to 350 degrees.
Step 2) Combine eggs, oil, buttermilk, & vanilla. Mix in sour cream.
Step 3) Add cake mix & cinnamon. (I also added some crushed cereal pieces but make sure you crush to a fine powder)
Step 4) Bake for 15-18 minutes.
Step 5) Beat cream cheese and butter until fluffy.  Add vanilla and powdered sugar. Adjust the consistency using milk if it is too thick.

Step 6) Pipe icing onto cooled cupcakes topping with cinnamon sugar & a cinnamon toast crunch square!

"I've Found the One My Heart Loves"

February, The month of Love! It’s officially been over 9 months that I’ve been married. Wow. Time has flown by but I like to think we are still in our honeymoon phase so when Dayspring offered me a chance to review their Mr. & Mrs. Collection through their monthly (in)spired deals program, I jumped at the chance. This cute little set included a Mr. & Mrs. Mug Set, a gift bag, & a coupon book.
The coupons are for things like laundry assistant, massage of your choice, dinner, cuddling, & other little suprises. I can’t even begin to tell you how much fun it is to sneak a coupon from the book into Scott’s jacket pocket or hide it around the house. Not only are these little surprises an awesome way to keep things fun but each one has a verse on the back like the one here:

Reading the verses are a constant reminder of the love we share and the commitment we made before God. It's a great way for us to brighten each others day and the verses help focus each other on our love and on God's love.

The mugs are a great touch and it's so nice to share coffee, hot chocolate, or any warm drink in the matching cups while we curl up and watch a movie, or when we get up from sleeping in on the weekend.

You can find these products and more here at Dayspring! Dayspring is even offering one of my lucky readers a $20 coupon code to spend on whatever your heart desires; be it home decor, jewelry, cards, or much more! This is a Rafflecopter giveaway. Click "Read More" below and then follow the instructions on the widget. All currents count! This is open to US residents only & you must spend a minimum of $20 to use the code.

The first 2 entries are mandatory - Visiting the DaySpring website and commenting with your favorite product, and following Onna Wanna Deal.

Chicken Ranch Lasagna!

My husband hates ricotta cheese. I dislike ground beef for the most part. Therefore, we never have lasagna in this household. Until now. Enter Cheesy. Chicken. Ranch. Pasta. I found this recipe at Real Mom Kitchen.

I'm pretty certain this will become a regular meal in our house now.

Ingredients:
2 (12 oz) cans evaporated milk
1 (1 oz) pkg. dry Ranch dressing mix
3 Cups cooked Chicken (cut in pieces)
1/8 tsp pepper
1 package of Lasagna noodles, cooked (amount depends on how many layers you would like, etc.)
2 Cups cheddar cheese, grated
2 Cups mozzarella cheese, grated

Step 1) Cook noodles & chicken
Step 2) Combine evaporated milk (avoid fat free as the sauce should thicken a little) and Ranch dressing in saucepan. Heat over low heat, stirring until dry ingredients are dissolved.
Step 3) Stir in chicken and pepper. Simmer, uncovered, 25 minutes stirring frequently.
Step 4) Layer lasagna, chicken, sauce, & cheese in well buttered pan repeating layers until desired thickness
Step 5) Bake at 350 for 35-40 mins.

My Love Story

1. How long have you and your significant other been together? 2 years & 9 months today!
2. How did you meet? {What's your "love" story?} At a party, how romanticcc!
3. If married, how long have you been married? If not, is this the guy you hope to marry? {do tell} 9 months today!
4. If you are married, where did you get married at? Big or small wedding? If not, where would you like to get married? And will it be big or small? Big wedding at a little red church <3
5. Do you have any nick-names that you call one another? Do share! We change nicknames more often than we change underwear.
6. Name 3 things you love most about your honey. Intelligence, Humor, & the fact that he understands me.
7. Tell us how he proposed? Or your ideal proposal? On a post-it note with a ring around a beanie baby groundhogs arm on my birthday at a hockey game. It was basically amazingly perfect.
8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals? He's more of a jewelry, flowers & dinner kind of guy.
9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch? It depends on my mood. Probably couch but sunset dinner is nice every once in a while.
10. Tell us one thing you'd like to do with your significant one day. If you could do anything? Go anywhere? Have an awesome family & TRAVEL!!
11. Tell us what you plan on doing on this Valentine's Day. Staying in, I think he's making me dinner.
12. Are you asking for anything this Valentine's day? Nope. I'd rather save money!
13. Give us one piece of advice of keeping a relationship strong and full of love. Pick on each other every once in a while :-P and LAUGH!
14. Show us a picture of what love means to you.

Sometimes we need to remember:

I have needed to remember this lately. God is with you where ever you go. You shouldn't be afraid. Have faith and courage in everything you do and where ever you go. I feel like it's something we may forget easily.
